Raspberry or Peach Smoothies - serves 4
Ingredients:
1 12-oz. can peach, mango, or apricot nectar, chilled
2 cups frozen unsweetened peach slices
1 ¾ cups reduced-fat milk
3 cups frozen lightly sweetened red raspberries
2 tbsp honey

Preparation:
For Peach Smoothie: Pour peach nectar into blender; add frozen peaches.
Cover and blend until smooth. Transfer to pitcher or glass measuring cup.

For Raspberry Smoothie: Pour milk into blender; add frozen raspberries
and honey. Cover and blend until smooth.

For each serving, slowly pour both smoothies at the same time into opposite sides of a tall glass.


BBQ Glazed Chicken - Serves 4
Ingredients:
¼ cup Italian dressing, divided
4small boneless skinless chicken breasts
¼ cup Chicken & Rib BBQ Sauce
2 tbsp Pure Orange Marmalade

Preparation:
Preheat grill to medium heat. Pour 2 tbsp. of the dressing over chicken in shallow dish or reseal able plastic bag. Refrigerate 10 min. or up to 24 hours to marinate.

Mix remaining 2 tbsp. dressing, the barbeque sauce, and marmalade; set aside.

Place chicken on grill; cover. Grill 12 to 15 min. or until cooked through (170 F), turning occasionally and brushing with sauce mixture during last few minutes of cooking. Let stand, covered with foil, for a few minutes before serving.


Sautéed Shrimp with Chipotle Sauce
 
Ingredients:
¾ cup (175 mL) mayonnaise
1 to 2 chipotle peppers in adobo finely chopped
2 tbsp (30 mL) Olive Oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 tbsp (15 mL) sugar (optional)
½ tsp (2 mL) oregano leaves, crushed
1 lb (500 g) uncooked medium shrimp,
peeled and deveined
¼ tsp (1 mL) salt
1/8 tsp (0.5 mL) ground black pepper

Preparation:
In small bowl, combine mayonnaise and chipotle peppers: set aside.

In 12-inch (30 cm) nonstick skillet, heat olive oil over medium-high heat and cook onion, garlic, sugar, and oregano, stirring occasionally, 3 minutes or until onion is tender. Stir in shrimp, salt and pepper and cook 3 minutes or until shrimp turn pink. Remove from heat; stir in mayonnaise mixture. Serve, if desired, with hot cooked rice.

Macadamia Coconut Cookie Bars
Ingredients:
1 package dry sugar cookie mix, prepared to package directions
1 cup macadamia nuts
1 cup shredded coconut
1 cup white chocolate chips

Supplies:
9 by 12-inch baking dish

Preparation:
Softened butter to prepare baking dish

Preheat oven to 375 degrees. Add macadamia nuts, shredded coconut, and white chocolate chips to already prepared cookie mix. Butter the baking dish and spread cookie dough evenly into a thin layer across baking dish.

Bake time:
15 minutes or until lightly golden brown. When done: Remove from oven, and cool slightly. Then cut into squares, and serve.


Orange Fizz (Cold Summer Drink) - Serves 8
 
Ingredients:
1 cup sugar
1 envelope unsweetened orange drink mix
4 cups cold water
3 cans (355 mL each) cold ginger ale ice

Preparation:
Place sugar and drink mix in glass pitcher. Add water; stir until drink mix is dissolved. Stir in ginger ale. Serve over ice cubes.

Prep time: 5 min.
Total time: 5 min.


Curried Chicken
Ingredients:
(2-4)Chicken breasts
1 Purple Onion
Mushrooms; chopped (as much as desired)
Carrots; chopped (as much as desired)
Spinach (as much as desired)
1 can cream of chicken soup
1 can coconut milk
Curry powder (add to taste)
Cumin (add to taste)

Preparation:
Cut up chicken breast into bite-sized pieces. Through them into ready wok and cook until brown. Add onion, carrots and spinach and cook, stirring occasionally. When carrots become tender, add can of cream of chicken and coconut milk; stirring consistently. Add curry and cumin powder to desired taste. Mix well. Serve.

Prep time: 15 minutes
Cook time: 20-30 minutes


Chocolate-Banana Shakes - Serves 4
 
Ingredients:
1¾ cups milk
1½ cups vanilla yogurt
1 small banana, cut into chunks
½ of a 4 serving pkg. (about 2 tbsp)
instant chocolate pudding mix
Strawberries (optional)
Grated chocolate (optional)

Preparation:
In blender, combine milk, yogurt, banana, and pudding mix.
Cover and blend until smooth. If desired, garnish each serving
with a strawberry and grated chocolate.
